Grapes from the single vineyard 'Ravera', famous MGA, located in the commune of Novello. The soil is limestone-clay with the presence of Sant'Agata marls. Ravera di Novello is a fabulous hillside with west/southwest exposure. Altitude of about 400 m above sea level, average age of vines 34 years and density per hectare of about 4,500 plants on a total area of about 2.1 hectares. The oldest part was planted in 1935.
Vinification: Strictly manual grape harvest on October 14, 2019. After soft crushing, fermentation lasts about four to five weeks in steel tanks in contact with the skins. This time includes pre- and post-fermentation maceration using the traditional submerged cap method. Slow malolactic in barrel, until late spring. The wine then remains more than a year on the lees without racking.
Aging: about 32 months in large oak barrels.
Description: Intense garnet red color. Initially austere on the nose, it evokes complex floral notes that open up in the glass as the minutes pass, hints of red fruit, chalk and white pepper stand out. The palate is fine with ripe red fruit sensations. Taut, compact tannins make the wine very classic. Vibrant and vertical acidity. Extremely elegant and refined. We recommend decanting it a few hours before serving.
