Cuvée Nicolais Francois 1998 - Billecarte Salmon

This is top quality vintage Champagne from many a connoisseur's favourite producer. This exceptional cuvée, first created in 1964 in homage to the founder of the house, is made up from fruit sourced from grand crus in Côte des Blancs (Chardonnay) and the Montagne de Reims (Pinot Noir).

Tasting Notes : The nose has delicate aromas of white flowers and notes of brioche, leading to a fine yeasty palate with soft red fruit hints and citrus freshness. The finish is crisp, clean and long.

Method of Production : The Chardonnay was sourced from vineyards in the grand crus of the Côte des Blancs. The Pinot Noir was from the grand crus of the Montagne de Riems. All these vineyards are rated as 100% on the Champagne quality rating scale - their 'echelle des crus'. The wines were then vinified in traditional foudres that imparted an extra depth and richness. Skilful blending and then long ageing in bottle (around eight years before being disgorged) with its yeast lees has crafted a supremely elegant wine with countless layers of complexity.
